Alicia and I talked about taking a trip to the Houston Zoo on one of the 2 days she had a break from school. We decided on today, Kevin took off from work, and I learned just last week that today was also one of the zoo’s Free Days. So, I unexpectedly saved our family about $50 in admission costs. :)
Now time for the pictures. Most were taken on our air-conditioned picnic in the backseat of our van. (It was so hot outside; we drained all of our water pretty early and then refilled in the water fountain.)
Otherwise the pictures are pretty self-explanatory, if you’ve ever been to a zoo.

This pic serves double purpose – one, it is a great sky pic. Two, it is what Kennedy says every time she sees this water tower… If you’ve ever watched Blue’s Clues, you know what I’m talking about. And if you can’t see what she’s referring to, it’s the paw print on the water tower (which is actually a Tiger paw print, not a dog.)

We went to Cracker Barrel for dinner. Colby was completely set on having biscuits. It seemed as if I’d make the biscuit the way I like it and then he’d get upset, so I’d eat it. So at the end of the meal, when he realized all the biscuits were gone, he was Really upset.
The waitress brought us an entire basket of biscuits, just for Colby.

Meet Kevin’s newest nephew, now 2 months old. Kennedy was quite smitten with him.
We were so glad Kristin could make a one-night trip [solo!] with her 3 boys. My kids ask almost daily when they can see their cousins. I am so grateful they can grow up with same-age family.

Tonight, for the first time in a long time, I danced with my kids. I mean, really danced.

Carlee is 20 months old today! Her old (rear-facing) carseat was getting too small. The American Academy of Pediatrics now recommends turning your kids to forward facing when they are 2 years old. (This is a new recommendation, as Colby was forward facing at age 1 and Kennedy at 18 months.)
She is clearly happier to be forward facing.

A rock hit my windshield today. We were driving along a 2-lane road and the cars were coming at 60 mph. The noise was so loud, I screamed.
Kevin groaned. But his groan sounded like a growl. So Kennedy said, “Mommy, why is Daddy a lion?”

Since my AIH diagnosis, I’ve been trying to eat uber-healthy foods. The steroids I’m on give me the munchies, so I am trying to make every bite count. I talked to my great friend who is a nutritionist and asked her about the number of calories I should be consuming per day, which for my height and weight is about 1250. So, that totally changes how much I should be eating – if you look at the nutrition labels on food, you’ll notice that the calories listed are for a 2500 calorie diet. I should be eating fully half of what is printed on the back of those boxes.
With that said, I am thankful that I like to eat fruits and veggies, because I’ll be eating a lot of them. Today’s pic is what I had for lunch. I lost count of the number of calories [I'm keeping track but not for every single thing yet.], but I really enjoyed it.

Ingredients:
- fresh spinach leaves
- fresh sliced strawberries
- pine nuts
- feta cheese crumbles
- raspberry vinaigrette dressing
[baby carrots in the background because I wanted something crunchy]

My cousin Jane and her daughter Kimberly stopped by today. They are driving from their residence in Colorado to a family reunion in Mississippi. [Texas is about halfway, but somewhat out of the way. We're just special like that, that they came to visit.]
My kids wouldn’t sit still for a picture (big surprise), but I did snap this one of Carlee giving Kimberly “fives”.

When we told Kevin’s parents about the bounty of vegetables we have been given from my uncle’s garden, Kevin’s mom told us she’d love to have a squash casserole. So, we brought the squash and Kevin [with the help of his Little Chef Kennedy] made this wonderful dish to accompany our lunch.

I took this pic right after church today, as we were packing the car and heading to Bedford, TX (Kevin’s hometown) for the fireworks show there. July 4th is my favorite holiday, and Kevin has been talking about his hometown fireworks for years now. I’m so glad I finally got to see them, and every bit of hype was true – they were fantastic! In fact, my Facebook status was this:
“My list of 4th of July essentials: barbeque, ice cream, fireworks, watermelon, & swimming. This year I had to do without the last 2, but it was worth it to see awesome fireworks in Bedford tonight. God bless America, land that I love!”

Tonight we went with Doc & Belle & Katrina to see Toy Story 3. I wasn’t sure if this one would compare, since I loved #1 & #2. But we all loved it. I thought it was incredibly funny.
Carlee was happy with lots of popcorn. She kept asking where the Baby went.
And here’s us, in front of the movie poster, trying rather unsuccessfully to get 5 wiggly family members to pose for a comfortable pic.

We planted this just a few weeks ago in our front/side yard. We had spaghetti & meatballs tonight with fresh basil. Nothing like it.

Anyone have a good basil pesto recipe? Looks like we’ll have lots of basil.
