Jenna. Day 3. Alicia + lasagna.

Alicia made a fabulous turkey basil & zucchini lasagna. Here’s the recipe as much as I can remember from memory:
1 lb. ground turkey (the recipe actually doesn’t call for any meat, but my family is all carnivores.)
3 large zucchini, diced
1 jar spaghetti sauce
1 16-oz. container cottage cheese
fresh basil – can’t remember how much? 1/4 c?
1 egg
1 box lasagna noodles
mozzarella cheese
Brown the meat and combine with the spaghetti sauce. In a blender/food processor, pulse the basil and cottage cheese until well blended (texture will actually look more like ricotta cheese). Then hand-beat an egg into the basil & cottage cheese mixture.
Layer the lasagna in a well-greased pan: (I’m sure I have this wrong, so however it is layered in there it will turn out delicious.)
1. meat sauce
2. lasagna noodles – uncooked
3. basil & cottage cheese mixture
4. meat sauce
5. mozz. cheese
6. lasagna noodles
7. basil & cottage cheese mixture
8. meat sauce
9. mozz. cheese
Sprinkle with parm cheese on top.
